Have no fear, Jerusalem Artichokes are here. Also known as a Sunchoke, Jerusalem artichokes cook just like a potato with a gritty, tangy, artichoke flavor. Very interesting addition to a traditional Thanksgiving feast if you’re looking to perk up your platter, try adding them to a roasted root dish along side potatoes, beets, carrots and turnips. Alone or with other veggie friends, a simple olive oil and salt sprinkle will do the job. Roast at 400 degrees F for 20-30 minutes or until tender. Leave the skin on for an extra crunch and chewy caramelization created by the high heat and oil.
